With the big bounty of Zucchini and tomatoes this year, we tend to make our favorite side dish a lot, and it only takes a few minutes to saute.
INGREDIENTS:
2c Zucchini (sliced)
2 Tomatoes (thinly wedged)
1tsp Garlic (minced)
1tsp Salt
In large frying pan,
– 1Tbsp Oil
– Add garlic and salt
– Add zucchini
– let saute for a few minutes
– Then add tomatoes
This side dish goes well with fish, chicken, and beef courses.
