Apple Muffins

As its fall and Applefest is next weekend in Bayfield Wisconsin, I decided to try this recipe. These muffins didn’t last long.

Apple Cake

  1. 2c  sugar
  2. 1 1/2c  butter(melted)
  3. 4  eggs
  4. 6c   grated apples
  5. 2tsp  baking powder
  6. 2tsp  baking soda
  7. 2tsp  cinnamon
  8. 3c  flour
  9. 1/2tsp salt

mix all together and place in 375 temp oven and bake for 30 minutes or until toothpick comes out clean.

Once the muffins are done, I let cool for a couple of hours

top with Maple Syrup Frosting

  1. 2pkg’s  cream cheese(room temp)
  2. 1/2c  butter(room temp)
  3. 3/4c   pure maple syrup
  4. 4c   powder sugar
  5. 1 and 1/2tsp vanilla

beat together and frost muffins

I chopped pecans and sprinkled over frosting.

Carmel frosting

  1. 1/2c  butter
  2. 1c      packed brown sugar
  3. 3c      powder sugar
  4. 1/2tsp  vanilla

In saucepan, melt butter,add brown sugar. Cook over low heat for 2 minutes,stirring constantly. Add milk,continue cooking until mixture comes to a rolling boil. Remove from heat. slowly add powdered sugar and vanilla. once it is ready dab a small amount on top of Maple Syrup Frosting and add a whole pecan.
